GOOD GARLIC STORAGE 

Primarily AVOID damp OR hot and humid 
conditions

•  Store in a dry, well ventilated location. Even, mild temps seem best. 

• Away from direct sunlight and heat

• We store ours in the pantry like spuds or hang plaits away from damp, the sunlight and the stove top.

In Southern or cool areas do not store in the fridge as it may reduce flavour quality, garlic tends to sprout under cold conditions and hates the dampness most fridges provide which then rots it. However, in Northern, hot or tropical areas, garlic may regardless store better in the cool, in a well maintained refrigerator, away from the extreme heat and humid/heat.

• If you purchase new season garlic in bulk and you store it well it keeps for 4-5 months before sprouting in autumn sometime. You can always preserve a certain amount before sprouting to keep you going until the new harvest. Perhaps try to confit some (cook slowly in oil at low temp) or freeze peeled whole cloves to extend your garlic availability. It is risky though to store fresh (uncooked) garlic bottled in oil to prolong its life (partic. un-refrigerated), as it's possible for the oil to become contaminated with botulism, a highly toxic bacteria which can cause serious illness. 

Garlic IS a fresh, seasonal food, at its peak during summer and some way into autumn (into winter for some late white varieties). Once sprouted it is still enjoyable for quite a while, just not at its peak.
