Jerusalem Artichokes Flowering

The Jerusalem artichokes have budded up and begun their autumn flowering.



This means harvest time for these sweet, starchy little tubers is not far off.





It's easy to see their relationship to their larger cousins the sunflowers.

Soon I'll be able to show you the edible bits and perhaps a silky French soup recipe just in time for the cooling of the seasons...au revoir for now!
